Ingredients
100g enoki
1 1/2 cup soup stock
2 teaspoon miso
10-15 pieces dried wakame, soaked for 10 minutes
1/2 teaspoon molasses (optional)
A handful of sesame seed
Direction
Heat the soup stock in a pot till it boils and reduce to a simmer
Add the molasses, miso and enoki
When the enoki is cooked, remove from heat and serve with wakame and sesame seed
Note
I add molasses because it is so high in nutrients, if you don’t like a sweet tasting soup, feel free to remove it
If you do not have soup stock in hand, use water and add more miso for flavour
I eat the dried wakame raw, but if you want, you could cook it together with enoki, both is cooked within a few minutes
